2 ounces thinly sliced young Gouda cheese (aged 1 to 6 months)
5 (1/8 inch thick) slices Asian Pear
DIRECTIONS
Heat a large frying pan over medium-low heat. Meanwhile, spread half of the butter on one side of each slice of bread. Once the pan is warm, add 1 slice of bread, buttered side down, then top with half of the cheese, all of the pear slices, and finally the remaining cheese. Close with the second slice of bread, buttered side up. Cook until the bread is toasted and the cheese is melted, about 6 minutes per side.

Heat oven to 375°F. Combine cumin seeds with bay leaf and paprika in a spice mill or clean coffee grinder and process briefly. Add sugar and salt and process to combine. Set aside. Toss squash with oil, then cumin mixture. Spread on 2 baking sheets and roast until tender, about 25 minutes.

Holding each Brussels sprout by stem end, cut into very thin slices using slicer. Toss in a bowl to separate layers.
Lightly crush walnuts with your hands and add to Brussels sprouts along with cheese, oil, and lemon juice, then toss to combine. Season with pepper.
