1/2 cup fresh lemon juice
1 minced shallot
1 cup olive oil
1/4 cup minced fresh flat-leaf parsley
1 tablespoon honey
1 tablespoon whole grain Dijon mustard Salt and pepper to taste
Stir together lemon juice and minced shallot; let stand 5 minutes. Whisk in olive oil, parsley, honey, and mustard. Add salt and pepper to taste. Refrigerate in an airtight container up to 1 week.

Preheat oven to 425 degrees. Halve 4 plum tomatoes lengthwise; slice off a sliver from the skin side so that the halves lie flat in a baking dish.
In a small bowl, toss together 1/4 cup finely grated Parmesan cheese, 2 tablespoons plain breadcrumbs, 1/2 teaspoon mixed dried herbs (thyme, marjoram, oregano, and basil), 1 tablespoon olive oil, 1/4 teaspoon salt, and 1/8 teaspoon pepper. Mound mixture on top of each tomato half.
Bake until tomatoes are soft and topping is crisp and browned, about 20 minutes.

Mince garlic (smash each clove before mincing for optimal flavor).

Add spinach in batches, so pan doesn’t get too crowded (spinach will quickly wilt).
Add salt and pepper to taste.
Add parsley.
Add white wine and stir ingredients one final time.
Serve hot.
