Green Salad

  • 4 cups kale, coarsely chopped & packed
  • 2 tsp olive oil, extra virgin
  • 1 large garlic clove, crushed
  • 3/4 tsp salt
  • 1 tsp black pepper, ground
  • 2 large celery stalks, diced
  • 1 large green bell pepper, chopped
  • 1/2 medium zucchini, chopped
  • 1/2 long English cucumber, chopped
  • 1 cup broccoli, chopped
  • 1 cup green peas
  • 1 cup alfalfa sprouts

Add kale, olive oil, garlic, salt and black pepper to a large salad bowl. Massage until the kale starts to soften and wilt, 2 to 3 minutes. Add remaining ingredients to the bowl and mix. Serve cold.
