Red and Yellow Tomato Salad
- 1 tablespoons extra-virgin olive oil
- 1/2 tablespoon red wine vinegar
- 1 cloves garlic, minced
- 2 large ripe red tomatoes, cored and cut in large dice
- 1 large ripe yellow tomatoes, cored and cut in large dice
- 1/4 bunch basil leaves, coarsely chopped
In a large bowl combine the olive oil, vinegar, garlic, and a generous sprinkling of salt and pepper. Add the tomatoes and basil and toss together.
