Red and Yellow Tomato Salad

INGREDIENTS

  • 1 tablespoons extra-virgin olive oil
  • 1/2 tablespoon red wine vinegar
  • 1 cloves garlic, minced
  • 2 large ripe red tomatoes, cored and cut in large dice
  • 1 large ripe yellow tomatoes, cored and cut in large dice
  • 1/4 bunch basil leaves, coarsely chopped

DIRECTIONS

In a large bowl combine the olive oil, vinegar, garlic, and a generous sprinkling of salt and pepper.   Add the tomatoes and basil and toss together.
