Brown Sugar White Sweet Potatoes


  • 4 medium (about 2 1/2 lbs. total) white sweet potatoes, peeled, diced 1 inch (about 8 cups)
  • 2-3 Tbsp.  2% milk
  • 6 Tbsp.  unsalted butter
  • 3 Tbsp.  Light Brown Sugar
  • Salt and pepper to taste


Place potatoes in medium pot; cover with cold water. Bring to boil; reduce to MEDIUM, simmer until tender (when pierced with tip of knife), 30-35 min; drain. Return potatoes to pot; heat on LOW (to remove excess moisture), 3-5 min. Place potatoes, milk, butter, and brown sugar in food processor (or use hand blender); process just until smooth. Season to taste with salt and pepper; serve.
