Sautéed Mixed Mushrooms

  • 1 teaspoon olive oil
  • 1 pound mixed mushrooms, such as button, crimini, and shiitake, trimmed and thinly sliced
  • Coarse salt and ground pepper
  • 1 teaspoon sherry vinegar or red-wine vinegar

 

In a large nonstick or cast-iron skillet, heat oil over medium. Add mushrooms; season with salt and pepper, and cook until tender and lightly browned, 12 to 13 minutes. Remove from heat, and stir in vinegar.
