Melon-Spinach Cooler

  • 1 bunch flat-leaf spinach
  • 2 cups cut-up melon
  • ½ lemon, peel and white pith removed

Pass spinach, melon, and lemon through a juicer. Serve over ice. (Alternatively, blend spinach and melon in a blender, strain, and stir in 2 Tbsp. lemon juice.)
