Golden Delicious Apple Bundt Cake
- 12-cup bundt cake pan
- 3 Golden Delicious apples, peeled and diced
- 1 cup pecan pieces
- 1/2 cup sugar
- 2 teaspoons ground cinnamon
- 4 large eggs
- 2/3 cup safflower oil or canola
- 2-1/4 cups sugar
- 1 Cup apple sauce
- 1-1/2 teaspoon vanilla extract
- 3 cups all purpose flour
- 3-1/2 teaspoons baking powder
The first thing we need to do is preheat our oven to 350 degrees. Next we need to grease our bundt cake pan. You do not have grease — you can also spray it with a flour-and-oil baking spray. Then, set aside.
In a bowl, put the diced apples, pecan pieces and 1/2-cup of sugar, then stir to blend. You can put this aside for now. Now in a large mixing bowl, whisk the eggs, sugar, oil, applesauce and vanilla.
In another bowl combine the flour, baking powder and salt. Next, start to beat the dry ingredients into the oil and applesauce mixture until it is well-blended. Then stir in the diced apple mixture. When we have all of these ingredients mixed together thoroughly, it’s time to bake.
Bake the Golden Delicious Apple Bundt Cake
Spoon the mixture into our prepared baking pan. Place in the oven and let cook for 1 hour and 20 minutes. You can also test the cake by using a wooden toothpick — insert the toothpick into the center of the cake. If it comes out with few crumbs clinging to it, it’s done.
Let the pan cool on a rack for 15 minutes. If necessary you can loosen the with a spatula. Next, place the rack over the pan and carefully invert to cool completely. Slide the cooled cake onto the serving plate than flip. Slice and serve. For a final touch, you can also dust powdered sugar on top.
